Carrot Cake Oatmeal
We’re always on the look out for ways to make our weekday 6.30am breakfast with my older daughter, Lily, more inspired.
So when our designer Linda Cassady, who has certainly become our “brand’s best friend” since we met for the first time last November over coffee at Lula Cafe in Chicago, sent me the carrot cake oatmeal recipe I knew it would eventually find a home on our blog.
I cooked up a batch for this week so that I can simply spoon a serving into a bowl and reheat it in a microwave for 1 minute with a generous splash of milk to loosen it. It feels like a substantial breakfast to send my 8 year old off to school with. In addition, on a weekend it translates easily into a brunch recipe because of the cook time.
The carrot cake flavors are all there and for an extra shot of decadence add a good dash of Jo Snow Cardamon Rose Water Syrup or maple syrup. Chief Syrup Officer at Jo Snow, Melissa Yen, is another local Chicago food artisan who I’ve had the good fortune to meet. From cocktails to coffees, check out some of the recipes crafted with her syrups. You will find her through out the summer at the Logan Square Farmer’s Market making snow cones, always a treat on a hot day.
- 1 cup steel cut oats
- 1/2 tsp baking powder
- 1/4 tsp salt
- 3/4 cups shredded carrot
- 1/2 tsp ginger, powder - *substitute with 1 sachet of Sweet & Spicy Slow Cooker Spice Blend
- 1 tsp cinnamon, powder - *
- 1/8 cup raisins
- 1/2 cup walnuts, chopped & divided into 1/4 for the cooking and 1/4 for toppings
- 4 cups 2% milk / unsweetened almond milk
- 1 tsp vanilla extract
- 1/4 cup maple syrup / date syrup
- mix all the ingredients in the slow cooker
- cover and cook on LOW for 5 hours or HIGH for 2-3 hours
- stir and serve with the chopped walnuts and extra maple syrup or a new favorite Jo Snow's Cardamon Rose Water syrup
