Mama Musacchio’s Italian Peppers & Eggs

Following on from our introduction to the New Year post Namaste, this week we are Servehonoring our friend Susan Kelsey at the City of Lake Forest Business Accelerator.

To express our gratitude for Susan’s unwavering professional support and friendship she has given us and our fledgling business over the last 18 months, we asked her to provide us with a favorite family recipe we could adapt for her slow cooker. When Mama Musacchio’s Italian Peppers & Eggs dropped into our inboxes we were happy to work with a handful of simple, fresh ingredients.

It is serendipitous that Susan’s recipe arrived when it did, this past week has been extraordinary. The snow has blanketed us in Chicago with peace and stillness and for once I have an excuse not to leave the house at all. When my Mother-In-Law, Elizabeth, arrived for the holidays none of us knew this Arctic Blast was heading our way. So latterly we’ve spent a lot of time indoors gazing out at the growing icicles, looking at what it has left behind, including her!

We’ve survived on New Year’s leftovers until now but on day 2 of the school shutdown and with an unexpectedly full house still, the fridge is bare albeit for a box of free range eggs and a random selection of vegetables. So, as Elizabeth prepared for the second time in 24 hours to catch a plane home, we shared Mama Musacchio’s Italian Peppers & Eggs as a parting lunch.

Prep Time 10 – 15 minutes    
Cooking Time 2.5 hrs HIGH or 5 hrs LOW      
Servings 6

Ingredients    

1 tbsp light olive oil
1 medium onion, chopped
2 cups / 3 small bell peppers (red, green, yellow), chopped
3 cloves garlic, minced
2 tbsp Italian Herbs
1/2 tsp of both salt and black pepper
2 large potatoes, 1/3 inch rounds
8-10 eggs
2 tbsp milk

Chopped veg

In a heavy bottomed skillet heat the olive oil. Sauté the onion, peppers and garlic for 2 minutes over a medium heat. Transfer to your slow cooker.

Add the mixed herbs, salt, pepper and potatoes to the onion mixture in your slow cooker.

Whisk the eggs in a bowl with 2 tbsp milk and pour into your slow cooker. Stir well to combine all the ingredients.

Serve

This is a subtly flavored layered omelette with herbs and we suggest serving with fresh Italian bread, salty black olives and cheese.
