Mussels Marinara

Ingredients
- 1 tbsp olive oil
- 1 x 28 oz canned diced tomatoes
- 1 cup / 1 small onion, diced
- 1 cup / 2 celery ribs, diced
- 1/2 cup / 1 large carrot, diced
- 2 tsp / 4 cloves garlic, minced
- 1 tbsp tomato paste
- 1/2 cup / 4 fl oz red wine
- 1 tbsp brown sugar
- 1/2 tsp salt
- 1 Marinara blend
- 2 lbs live mussels, cleaned
- 1 1/2 cups Marinara sauce (above)
- a handful of chopped parsley
- 1 loaf crusty bread
Instructions
- combine the olive oil, tomatoes, onion, celery, carrot, garlic, tomato paste, red wine, brown sugar, and salt in the slow cooker
- sprinkle in the Marinara blend
- stir, cover and cook on LOW: 8 hours or HIGH: 4 hours
- in a heavy pan combine the mussels and 1 1/2 cups Marinara sauce
- cover and cook on a medium heat for 3-4 minutes, shake the pan to coat the mussels in the sauce
- the mussels are cooked when the shells open up
- dIscard any mussels which remain closed
Notes
- sprinkled with fresh chopped parsley and serve with crusty bread to soak up the delicious sauce
- pair with a dry rosé such as Italian Bardolino Chiaretto
