My daughter-in-law doesn’t eat pork. If I substituted chicken for pork in the pulled pork, what type of chicken and what quantity would you buy?
Dear Jann
Thank you for your great question. You can substitute the pork with 2 to 2 1/2 lbs boneless, skinless chicken thighs. We recommend reducing the cooking time to 6 – 7 hours on LOW or 3 hours on high for chicken so that it remains tender and juicy for shredding. Let us know how your daughter-in-law likes it.
