I had a busy night full of multiple sport events for my children one evening this week and needed a do ahead tasty dinner for my family. I used the Moroccan Tagine season packet and recipe. I substituted almond meal for the flour in the morning when I lightly browned the chicken. When I arrived home in the evening ready to serve dinner to my family, we had a wonderfully, flavorful dinner to share together. I added a side of veggies and big salad and we were good to go. Thanks to the Zen of Slow Cooking!

This was a great week of “clean eating” thanks to the Indian Dal! I made it without the olive oil (I have a nonstick slow cooker) and used a “no salt added” vegetable stock (Medford Farms– available at Dominick’s and Sunset Foods) instead of bouillon. Served it in roti (fresh cooked from prerolled dough from Costco) with a handful of fresh cilantro.
Heaven.
I am really enjoying my new slow cooking revolution! Although we are empty nesters now and we season our days with travel and dining out, I am now using my slow cooker on those days when I’m out the door and not home until dinner. I never halve the recipes as I can freeze and serve another delicious meal at another time. The whole spice infusions and organic herb blend products by Zen of Slow Cooking are the best cook’s helpers ever! I have already tried Coq au Vin (yummy!), Moroccan Tagine (ideal with mediterranean couscous and braised kale with olive oil, lime and garlic) and the Daube Provencal (with wide noodles and buttered peas, a melange of marvelous tastes!) Looking forward to the next selection of spice and herb blends to add to my slow cooking arsenal!
