Ingredients
- 2 tbsp olive oil
- 1 cup / 1 large white onion, diced
- 2 tsp / 4 cloves garlic, minced
- 1 Indian Dal blend
- 1/2 tsp salt
- 1 medium cauliflower, roughly chopped
- 4 cups / 32 fl oz vegetable broth
- 1 can coconut milk
Instructions
- in the Instant Pot heat the oil on medium sauté function
- add the onion and cook for 2 minutes to soften
- stir the garlic into the onion mixture and turn off sauté function
- stir in the Indian Dal, salt, cauliflower, vegetable broth, and coconut milk
- secure the Instant Pot lid and set pressure valve to Sealing
- set Manual / Pressure Cook for 5 minutes
- when cooked, turn the dial to Venting for Quick Pressure Release
- blend the soup to a creamy consistency using an immersion blender
- serve the soup can be served immediately or chilled
