Ingredients
  1. 2 tbsp olive oil
  2. 1 cup / 1 large white onion, diced
  3. 2 tsp / 4 cloves garlic, minced
  4. 1 Indian Dal blend
  5. 1/2 tsp salt
  6. 1 medium cauliflower, roughly chopped
  7. 4 cups / 32 fl oz vegetable broth
  8. 1 can coconut milk
Instructions
  1. in the Instant Pot heat the oil on medium sauté function
  2. add the onion and cook for 2 minutes to soften
  3. stir the garlic into the onion mixture and turn off sauté function
  4. stir in the Indian Dal, salt, cauliflower, vegetable broth, and coconut milk
  5. secure the Instant Pot lid and set pressure valve to Sealing
  6. set Manual / Pressure Cook for 5 minutes
  7. when cooked, turn the dial to Venting for Quick Pressure Release
  8. blend the soup to a creamy consistency using an immersion blender
  9. serve the soup can be served immediately or chilled
