Slow Cooker Festive Fudge

This little grumpy nutcracker is guarding the fudge we made in the slow cooker.

Did you know that fudge rose in popularity during the 19th Century in America? And why?

As the price of refined sugar dropped home candy making became more affordable. Since fudge making requires no special kitchen equipment it was, and still is eminently accessible to the home cook. The same remains true today, no thermometers or boiling sugar required, making it a safe and fun cooking activity for the kids too.

What you need:

  • A slow cooker / Crockpot
  • 14 oz can condensed milk
  • 16oz white chocolate 🍫 (or 12oz milk / dark) broken or baking chips

Flavours:

  • Cranberry Cookie
    • a handful of dried cranberries
    • 6 broken cookies 🍪
  • Mint Candy Cane
    • 6 drops mint essence / extract we ❤️ @nielsenmassey 🍃 Peppermint Essence, 8 candy canes, broken

Method
🌟Turn on the slow cooker to LOW and leave the lid off (you can cook on HIGH but stir more frequently and be more attentive)
🌟add the chocolate pieces and condensed milk to slow cooker
🌟stir every 15 minutes while it’s melting together (every 8-10 minutes if cooking on HiGH)
🌟 once a crust appears on top stir once more and leave for another 10 minutes
🌟depending on your slow cooker the process will take around 1 hour from start to finish on LOW or 40 minutes on HIGH (you can get on with prepping other things or gift wrapping while the slow cooker does it’s magic)
🌟once the mixture is ready you can stir in the fudge flavours
🌟pot into a parchment lined baking tin and refrigerate for several hours until set

Other fudge additions – Malt chocolate balls – Whoppers / Maltesers, pistachio & cherry, vanilla choc chip, Junior mints…sprinkles… go wild and create your own. If adding alcohol be careful because it may change the consistency and setting of the fudge.

Zen Moment

This week I want to share an invaluable tool I have been using to help me relax into sleep each night. It is, without a doubt, helping me to switch off! Each night I tuck myself up in bed and choose a guided meditation on the Insight Timer app on my phone. I always fall asleep before the end. Many of the meditations are free, and my favorites include Sarah Blondin. We hope this can help you relax a little more during the busy holiday season.

(this is NOT a paid endorsement, just something I love)
