Instant Pot Balsamic Sausages & Mixed Peppers

Last weekend we chalked up our 8th move in 15 years, and my Instant Pot has been working overtime. This is somewhat perfect timing for us since we are supporting the Food Marketing Institute’s Family Meals Month campaign, which debuted in September of 2015.

On closing our new front door behind the moving men, we turned to unpacking boxes and then to food. With my Instant Pot unpacked and just five simple ingredients to hand, a couple of pantry staples including our Mediterranean spice packet from our own range, the Balsamic Sausages and Mixed Peppers was prepped in 5 minutes, and cooked in 12. We were spooning it into our mouths in under 20 minutes! A firm family favorite, the filling and rich tomato sauce envelopes the sausages, serve over sliced baguette or polenta.

There is a video recipe below, and a printable version, both of which use Italian sausage. I include a tried and tested vegetarian option alternative using Quorn sausages with a shorter cooking time of 6 minutes!

Instant Pot Balsamic Sausages and Mixed Peppers
Slow Cook: Prep Time: 5m , Cook Time: LOW for 7-8 hours, HIGH for 3 hours, Servings 4-6 Pressure Cook: Prep Time: 5m , Cook Time: 12m, **Total Cook Time: 16m, Servings: 4-6

Ingredients
  1. 1 tbsp olive oil
  2. 1 lb of Italian sausages, * Vegetarian alternative below
  3. 1 1/2 cups / 1 large red onion, halved &
  4. sliced
  5. 1 packet of Mediterranean blend
  6. 2 bell peppers: 1 red & 1green, halved
  7. and sliced
  8. 1 x 8 oz can tomato sauce
  9. 3 tbsp balsamic vinegar
  10. 1 French baguette
Pressure Cooker Method tested in an Instant Pot
  1. heat oil in Instant Pot on medium sauté function and cook onion for 2-3 minutes
  2. add sausages and brown for another minute
  3. stir in Mediterranean blend, peppers, tomato sauce & balsamic vinegar
  4. turn off sauté function
  5. secure Instant Pot lid & set pressure valve to Sealing
  6. cook on Manual / Pressure Cook for 12 minutes ** vegetarian alternative
  7. once cooked turn the dial to Venting to Quick Pressure Release
  8. serve over buttered French baguette
Slow Cooker Method tested in a 6 quart Crock Pot
  1. heat oil in a skillet on medium: brown sausages for 2 minutes; add onions to sausages in skillet: sauté for another 2 minutes
  2. transfer sausage mixture to slow cooker
  3. sprinkle Mediterranean blend over sausages, add peppers, stir in tomato sauce and balsamic vinegar
  4. cover and cook on LOW for 8 hrs or HIGH for 3 1/2 hrs *** vegetarian alternative
  5. serve on top of baguette, freshly sliced lengthwise
Notes
  1. * substitute the Italian sausage for 8 Quorn vegetarian sausages, or similar brand
  2. ** reduce cook time to 6 minutes on Manual / Pressure Cook for vegetarian option
  3. *** cover and cook on LOW for 6 hrs or HIGH for 2 1/2 hrs
