Grilled Smoky BBQ Salmon

Some things DO change. For years my parents have preferred a “real” BBQ with hot coals and fire.

Admittedly the taste is different but I prefer to leave that to the pit masters. There are so many great rubs to choose from (including our Smoky BBQ) and wood chip boxes you can buy to infuse the flavor of real BBQ when using a gas grill at home. Plus nobody loves the taste of charcoal or woodsmoke if you get it wrong. Of course, there are rituals involved with lighting real fire and that simply isn’t the same with a gas grill.

My Mom and Dad entertain a lot in the summer with friends and mom piles the BBQ high with sausages, burgers, chicken pieces, marinaded meat kebabs, and butterflied joints of meat. Traditionally, Dad tends to the coals until they’re “just right”, then stands well back as mom does all of the grilling. She hates overcooked meat and likes to be in control of her outdoor kitchen.

While I was away camping earlier this month my folks very kindly moved 250 miles south to puppy-sit at my home in Bristol. Knowing that the weather was going to be exceptionally good I left a full gas tank for the Weber grill in the hope that they would use it.

Positioned right outside the kitchen door on the patio deck the Weber is well within reach. With the French doors permanently open it was an invitation to spend hours on the deck and in the garden. The grill beckoned, and so did the temptation to try something new. All they had to do was fire it up, pop the steaks on and sit back and relax.

Smoky BBQ Grilled Salmon

Ingredients

  • 1.5 lbs salmon fillet
  • 2 tbsp olive oil
  • Smoky BBQ blend

Instructions

Grilling

  • In a small bowl mix oil with the Smoky BBQ blend
  • Brush over the flesh side of the salmon fillet(s)
  • Pre-heat grill to 450 f
  • Place Salmon skin side down on the hot grill, cover with the lid, & leave for 8 – 10 minutes depending on thickness
  • flip salmon for 1 additional minute at the end to finish cooking
  • Serve in a wrap or naan.

Notes

It is important not to move the salmon around the grill until after the first 8-10 minutes of cooking because it may stick. 
Don’t oil the grill, but if you are concerned the salmon may stick then brush the skin-side with a little olive oil.

Smoky BBQ Grilled Tofu, Summer Salsa

Ingredients

  • 2 tbsp light olive oil
  • 1 Smoky BBQ blend
  • 2 x 8oz packs firm tofu 1/2” slices

Salsa

  • ? 1/2 English cucumber small dice
  • ? 1” slice from a medium watermelon small dice
  • ? 12 mint leaves finely chopped
  • 2 limes juiced
  • ? and pepper to taste
  • favorite BBQ sauce if you like it saucy

Instructions

  • I’m a small bowl mix the oil & BBQ blend, rub onto one side of the tofu slices
  • Heat the grill to 400f
  • Place Tofu naked side down on grill, cover with lid and leave for 6 minutes
  • Flip for a further minute onto the side with the marinade
  • Remove from grill, top with salsa

Notes
